and today's lunch is Steve's Own Pork and Cranberry Rice Soup ... which really ought to herald an
afternoon of relaxation instead of a sea of boxes needing tape... but I have Van Morrison on Pandora at the
moment, so it isn't a bad afternoon so far ...

slowcooked, two meals from one pot

Well, hokay ... here you go.

This is actually the leftovers to a crock pot thingie I did; but the basic idea was, using a 1 1/2 or 2 qt crock pot, planned for one main meal and one lunch for 2:

3 or 4 thin sliced boneless pork chops
1 cup dry cranberries
2 or 3 good sized carrots
1 or more medium or several small onions
1 cup low sodium chicken broth
1 cup cranberry juice cocktail
(optional)1 tablespoon of apple butter or hoison sauce per chop

slice onions, spread on bottom of crock pot

slice or coin carrots thinly, place on top of onions -- ideally it will be a layer over the onions, but don't sweat it. Distribute (kind of evenly) the cranberries around the edges of the pile.

pan brown or sear pork chops (approx 4 minutes a side) in olive oil, place on top of pile in crockpot.

dab tablespoon or so of hoisin sauce or apple butter on each pork chop

carefully add liquids to crockpot, avoiding the chops -- you want the sauce to stay on the chops if you can.

Cover crockpot, cook on low seven hours or so.

==== And our first meal was carrot, onion, and pork, with some cranberries, with a green salad on the side, a few pieces of nice cheddar, and good Borealis Aroostook wheat bread. The crockpot leftovers were stored in a ceramic bowl.


The soup? Was what I took with me to for lunch - I shredded one remaining pork chop, added some rice (guessing a half cup -- we always have cooked brown rice in refrigerator these days)and split the leftover sauce (Sharon needed lunch too!) which had cranberries and carrots and lovely bits of cooked onion. It microwaved well at the office, and I could have added a little pepper to good effect. I shredded the pork chop, by the way, so microwaving wouldn't reinforce the edges of seared meat; instead the effect was that of tenderizing it.

Thanks Steve. I'm just starting to collect crock pot recipes, and I love cranberries but don't always know how/when to incorporate into a dish, so this fills multiple needs for me. And it sounds great. Have no idea what hoisin sauce is, so will have to research that.

Hoisin sauce (http://en.wikipedia.org/wiki/Hoisin_sauce) is the sauce served with Chinese crispy aromatic duck. Sometimes incorrectly called plum sauce (there are no plums in sight).

Plum sauce is my absolute favorite chinese sauce! Now I know what to look for in a store. Oh boy! Thank you for the info!

Hoisin sauce is another "found in my kitchen, not in my mother's" along with sweet and sour sauce and duck sauce. Duck sauce would also work with the pork I guess, but I think hoisin sauce is more thematic given the color.
