Tonight is my first graveyard shift since ... the late 80's? I'm going to be cruel to my co-workers.
I did end up making the curry - lamb stew meat, caramelized onions, garlic, ~2 tablespoons of Penzey's Sweet Curry Powder, Normandy Blend Vegetable mix (as described above), and a can of coconut milk. We had if for dinner - it was really good! And there's enough left over that I can take it to work for lunch/supper/whatever that meal will be.
